Having one of the most diverse ethnic populations in the world inevitably means having some of the most diverse food cultures. Foodies celebrate the amazing choice of regional cuisines from around the archipelago, usually characterized by the use of fresh local ingredients. Within urbanization the regional dishes and styles have become part of the food scene of the towns and cities. But most remain little known outside Indonesia. We look at street foods, cafes, restaurants and selected dishes from Indonesia’s increasingly famous ethnic cuisines.
